* PLANTAIN CUPS WITH AVOCADO AND SHRIMP

Ingredients

4 plantains 
1 cup oil  for frying
2 tablespoons of olive oil
20 jumbo shrimp, peeled
4 cloves of garlic, crushed into pastet
sal
pepper
1 large avocado
juice of 1 lime


Instructions

1- Peel the plantains. 
2- Cut into 6 slices each plantain.
3- Heat oil for frying over medium temperature.
4- Fry each slice until they are golden brown all over










5- Squeezer the slices using a tostonera forming small cups.

 6- Once all the cups are formed, fry them again over medium heat until all the light parts have turned golden brown.


For the Shrimp

1- Heat the olive oil over very low heat.
2- Add the garlic and cook for 3 to 4 minutes. Do not let the garlic burn.
3- Add the shrimp and cook until they are pink throughout. Season with sal and pepper to taste.
4- Remove from the heat ant reserve.

For the avocado

1- peel avocado and crush using a folk until it doesn't have any lumps.
2- Mix in the lime Juice.
3- Season with sal and pepper to taste.

To assemble 

1- Spoon about a tablespoon of avocado mix into the cups
2- Top each with a shrimp and garnish with cilantro leaves.
3- Serve immediately.
